The day after solstice. Dreary out, but warm inside.
Invented sweet potato banana cherry blueberry bread pudding sweetened only with a small amount of maple syrup, and whipped cream on top. I tried making the whipped cream pink using pomegranate concentrate but the cream swallowed all the color no matter how much I put in. (Similarly to the hilarious joke my genes played on me.) The bread pudding turned out perfect though. I'm pleased with myself considering the recipe was 90% improvised. I should write down my successful improvisations but I never do, but, that forces me to trust my instincts and be better at pulling recipes out of thin air, and being pleasantly surprised when it works out.
I should do a cooking blog and be one of those people who write an essay about their life before sharing the goddamn recipe. It'll be just like this diary lol. Actually, yes, just decided, I am going to start including recipes at the end of my long rants. For my own amusement.
I'm tired and can't remember if I already took an edible today or not. I probably need two more coffees. M keeps interrupting my train of thought every 5 minutes while he raves about the graphics of the video game he's playing. He's in the top 75% of gamers worldwide now for this game. Lol. I think his new gaming addiction is actually a very healthy replacement for alcohol addiction, where he can express all his destructive tendencies in a safe fictional environment. It makes him happy and I'm happy that he's happy.
I almost forgot! He constructed a church for the rodents out of a cardboard box, complete with entrance and exit doors and an enormous gaudy cross on top of an angled barn-shaped roof. He got really into making it and it was hilarious watching the rodents play in it (and peeing and pooping in "church.") That's my girls.
INDULGENT LOW SUGAR SWEET POTATO CREAM CHEESE BREAD PUDDING RECIPE WOW!
1 can pureed sweet potatoes
1 ripe banana, mashed
1 cup heavy whipping cream or milk of choice (or was it 2 cups? fuck. use your own judgment. i trust you.)
2-3 eggs
5-6 slices of bread, chopped into 1" cubes
1 container of cream cheese chopped into cubes
1/8 cup maple syrup
pumpkin pie seasoning, cinnamon, ginger, cardamom, allspice, to taste
vanilla extract, to taste
almond extract (half the amount of vanilla you used)
shit ton of fresh or frozen cherries and blueberries, or whatever fruit you want
more heavy whipping cream (for whipped cream topping)
ghee or coconut oil for greasing
Preheat oven to 350 degrees fahrenheit.
In large bowl blend sweet potatoes, banana, cream, eggs, maple syrup, spices, and extracts.
Submerge bread cubes into said bowl to soak a few minutes until soggy.
Grease a big rectangular glass casserole baking dish.
Pour contents of bowl into said baking dish.
Evenly distribute cream cheese cubes on top.
Pour a ludicrously generous layer of fruit on top of that.
Bake about 1 hour.
Cool at room temp 5-10 minutes. Whip cream together with sweetener of choice and a little vanilla until thick and fluffy. Put that atop your slice of warm bread pudding, with any other toppings you like. Mmmm.
It's pretty hard to mess up since it's basically just french toast, baked. It tastes like what you'd get if you crossed french toast with pumpkin pie and fruit topped cheesecake. It's remarkably effective at satisfying a sweet tooth with the added benefit of not giving you diabetes, cavities, or destroying your immune system and gut flora. You're welcome. Have a nice day.
